9 lasagna noodles
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
2 cups assorted roasted vegetables (zucchini, bell peppers, mushrooms)
2 cups marinara sauce
2 tablespoons olive oil
Salt and pepper to taste
Fresh basil for garnish

Instructions

Step Instruction
1 Preheat the oven to 375°F (190°C).
2 Roast the vegetables in olive oil, salt, and pepper for 20 minutes.
3 Cook the lasagna noodles according to package instructions.
4 Spread a layer of marinara sauce on the bottom of a baking dish.
5 Layer 3 noodles, half the ricotta, half the roasted vegetables, and one-third of the mozzarella.
6 Repeat the layering, finishing with mozzarella and Parmesan cheese on top.
7 Cover with foil and bake for 40 minutes, then remove foil and bake for another 20 minutes until bubbly.
